i still haven't seen all the roads, but my favorite so far is haiku valley runway.
the graphics were on low settings with low resolution. it was the only way my poor computer could record gameplay. the mountains are awesome to look at and you get to go through not one but TWO tunnels. i can't think of anything better. for added effect, try to hold your breath when driving through them. just don't pass out.
oh yeah the coords are...
"Haiku Valley" 0 49281.69 109.61 38986.07 -0.991 -0.005 -0.135 427914503

Haiku Valley is the place i am going to when i want to do some epic driving + a nice soundtrack that fits very well is something you shall have also.
Perfect combi for me is a fast car with good engine sound and listen to 'Shogun - Nowhere to run'
Take it easy until you reach the 2th tunnel

Either the Kelekole Pass or the road where you drive through Tantalus. It could also be the road that goes from Sharks Cove (I don't know the name, but it is very long).
Sorry I don't have any videos.
